Day 14 of 14 day inspiration challenge - Momos
One of my favourite things about a Himalayan destination - Momos!!!!!!! In Bhutan they are served with large dollops of a salty, sour chilli sauce and I have made it my personal mission to find the best ones in Bhutan... Momo corner in Thimpu is the front runner at the moment!
Doing some breakfast meal prep for the train tomorrow & using up some leftovers I had. Canned maple beans (add turmeric, paprika, pepper, garlic to make them more savoury), roasted potatoes in the cast iron and @isachandra tempeh bacon pulled from my freezer (I’ll be packing a bunch of this to boost my train meals) and I threw some spinach in with the potatoes and a tap of the bacon marinade to cook in the last few mins. I have roughly 1lb spinach left in my fridge so I’m trying to work in it everywhere.
Spinach is often cheap and on sale, it’s full of nutrients so if you can’t afford anything else go with washed spinach. This can replace lettuce in salads burgers or sandwiches plus smoothies and sauces or cooks well as a side or topping or pasta. Spinach is super versatile and quick cooking so it’s a must for frugal shopping lists and nutrition on the go. I also divided the rest of the baked beans into containers with some roasted Brussels sprouts from last night. This will help bulk up my train breakfast or if my food doesn’t arrive the cup of baked beans with some fruit (which is always on our menu onboard) and toast will serve as a full meal.
