Take one bag of sad looking salad, blitz it with two garlic cloves, a glug or two of basil oil, a small handful of cashew nuts and a squeeze of lemon juice. Stir generously into cooked wholewheat pasta and grate a little cheese on top of liked. Delicious and nutritious!

My lunch prep for a busy busy busy work week 🤤 I’ve really learned the importance of preparing food and taking lunch with me if I know I’m working the whole day or have no time to go home. It takes barely any time and saves yourself making silly decisions and buying shite and expensive food.
This lunch consists of:
4 handfuls of spinach
Plum tomatoes (yet only cut them when you will eat it or it will be one big soggy mess)
Baked sweet potato
I've gained 5 lbs since January and I attribute it to: 1. @caritosbakery vegan cupcakes 2. Homemade sourdough bread 3. Recipe testing for restaurants. 👌Not complaining. Here's my arancini (vegan + gf) aka deep fried smoky cheezy rice balls for Elements new dinner menu coming soon. In the mean time I have 2 new restaurants I'll be testing for soon...can't wait to play around with decadent vegan Belgian waffle recipes and figure out how to make vegan escargot.
