I decided to crack open the first package of deer meat (backstraps) from my first Wisconsin deer. Some of the best deer meat I have ever had. If only I had about 100 more pounds of this stuff. I’m very thankful to have some meat in the freezer even if I didn’t have a successful Fall. Dinners like this make me glad to be a hunter. #deer#wildgame

Not sure what to call this. It's venison inside top round cure with my regular bacon cure the cold smoked for 2 sessions of 12 hours each. It was then dried in an Umai bag until 33% weight loss. The flavor is very good with light salt, a hint of smoke, and the underlying venison flavor. It has a nice soft silky texture. #uncletskitchen#goodeats

Marinated this Venison Rump Roast in orange juice, lemon juice, garlic and onions for two days. Then I cooked it low and slow for four hours. It is so tender I do not even have to chew it. Sure goes great with my famous fried potatoes sprinkled with parsley and lots of love :) Just as delicious as the taste is the satisfaction one gets from growing food and hunting! They aren’t beautifully photographed but they are yummy. I could have amped up the salt a little and added some spice. I was worried about over salting since I added sausage. I’m making note of that. So far the youngest says it’s the best thing he has ever tasted. That’s a bit dramatic, but still awesome to hear. Not sure what sauce would be best. Ragu, enchilada, gravy?
